<El Recreo>
El Recreo, located in Palestina, Huila, has recently seen a generational shift in processing management—from the family elders to the younger generation. At the center of this transition is Michael, an 18-year-old producer.
Rather than aiming for so-called “experimental” processing methods, Michael focuses on traditional techniques. Through careful trial and error within this framework, he has created a coffee with uniquely expressive and memorable flavors.
One of the defining characteristics of this coffee comes from the region’s distinctive microclimate. Despite its elevation, Palestina experiences significant temperature differences between day and night, especially with notably cool nights.
As a result, a slow drying method known as “slow maturation” is commonly practiced here. Drying can take over a month—often nearly twice as long as a typical washed process. This extended drying time contributes to a depth of sweetness and clarity that goes beyond what fermentation alone can achieve.
During cupping sessions at origin, the entire family gathers in a small room. Afterward, they share meals together, exchanging thoughts on coffee, processing, and flavor. This collaborative and sincere approach—led by the younger generation—is clearly reflected in the cup.
