Located in the Arbegona district of Ethiopia’s southern Sidama Zone, this coffee comes from one of the country’s highest coffee-growing regions at elevations of 2,200–2,350 meters. The cool climate, fertile soils, and large temperature swings between day and night allow the cherries to mature slowly, developing high sugar content and complex flavors. Smallholder farmers here typically manage just 1–2 hectares of land, using traditional farming methods passed down through generations. In fact, several coffees from this region received awards at the 2021 Ethiopia Cup of Excellence, drawing international attention.
This lot comes from the relatively new Ficho washing station in Arbegona, which we sourced through Tri-Up for the second consecutive year. With continuous training and education on harvesting and processing, producers are refining their practices year after year, and the quality is expected to rise even further.
We roasted this coffee lightly. At first, given its high moisture content, we tried a high charge temperature, but the result lacked some mouthfeel and depth. By lowering the charge slightly while applying steady heat throughout the roast, we found the profile came together beautifully—smooth, silky, and distinctively Ethiopian. Roasting is a constant exploration: there’s never a single “correct” way, and that’s part of what makes it so fascinating.
As you brew, take a moment to inhale the aroma from the dripper: bright, floral notes reminiscent of bergamot will gently awaken your senses. In the cup, expect juicy stone fruit and tea-like sweetness upfront, gradually shifting toward a refreshing lemon-candy brightness as it cools. Fruity and lively, yet balanced with brown sugar sweetness and a silky texture, this washed Ethiopia is also excellent over ice for the warmer season.
