"Chiroso"

Chiroso is a variety that has been grown for generations in Urrao, Antioquia. Its green beans are slender and resemble those of the Geisha variety. Recent studies have revealed that it belongs to the Ethiopian heirloom lineage. In 2020, the washed Chiroso from the Los Tres Mosqueteros farm in the Urrao region took first place in the Cup of Excellence, making it a variety to watch.

Thanks to its resilience to cold, Chiroso thrives at high altitudes, and its high yield makes it particularly popular in the Urrao area.

This coffee is known for its clean and pure flavor profile, with the washed process used for its preparation. During fermentation, the cherries undergo an initial 24-hour aerobic fermentation while still in their cherry form. After pulping, they go through another 72-hour aerobic fermentation, perfectly balancing the aroma and acidity and creating a unique depth of flavor.

 

Danilo, a teenager who recently took over the management of his family’s farm, is a young and promising producer. When we visited Urrao to source coffee, we had the chance to cup coffees with local producers. Among them, Danilo’s Chiroso stood out with its exceptionally clean and floral aroma. While some coffees from the region showed defects related to the drying process, likely influenced by climate change, his coffee was remarkably clean despite being freshly harvested. It perfectly showcased the unique characteristics of the Chiroso variety.

Danilo’s farm, Finca Las Mañanitas, is located at an altitude of 2,018 meters. The rich nutrients and unique climate conditions of the area play a major role in enhancing the quality of the beans.

 

The Chiroso from Finca Las Mañanitas offers a clean finish and juicy fruitiness. With a moisture content of slightly over 11%, the beans were roasted lightly but with sufficient heat from the start to bring out their best qualities.

Chiroso from Urrao is captivating with its vibrant, ripe fruitiness. You’ll notice juicy flavors reminiscent of mandarin oranges and apricots. As it cools, subtle tropical notes, like mango, begin to emerge. Despite being lightly roasted, it has a syrupy, slightly heavy texture that feels pleasant on the palate, spreading sweet and tangy flavors gently in your mouth. The finish is softly sweet and lingers beautifully.
