As a sacred region for high-quality coffee production in Brazil, Mantiqueira de Minas attracts passionate attention from coffee buyers around the world. At the heart of this region lies the city of Carmo de Minas, internationally renowned for its rich coffee-growing tradition. For over 40 years, Mr. Glaucio Carneiro Pinto and his family have dedicated themselves to coffee cultivation in this area. Their accumulated experience and passion have evolved into a firm commitment to “sustainable production” and “uncompromising quality,” values now being passed down to the next generation.

The coffee trees on the farm grow along gentle slopes at elevations ranging from 1,000 to 1,300 meters above sea level. This rich altitude, combined with the unique climate of the Mantiqueira mountain range, gives the coffee its pronounced sweetness and complex acidity. In addition, Mr. Glaucio is one of the leading members of the Mantiqueira de Minas Coffee Producers Association. The coffees from this farm are certified with the “DO Mantiqueira de Minas” seal — a designation of origin that guarantees both strict quality standards and the authenticity of the region — making the coffee highly trustworthy and respected.

The secret behind Fazenda Coqueiro’s clean cup profile lies not only in the climate, but also in the meticulous care taken from harvest through drying. One notable practice is the careful hand-picking performed by experienced pickers over cloth sheets spread beneath the trees. This prevents the cherries from touching the ground, protecting them from soil bacteria and contamination while enhancing cup clarity. The harvested cherries are then immediately transported to the farm’s wet mill, where the most suitable processing method for each lot — washed, natural, or pulped natural — is carefully selected. During drying, the coffee is slowly dried on patios, and in the final stage mechanical dryers are used to evenly stabilize the moisture content across the entire lot, resulting in consistent quality.

When we first encountered this coffee at a cupping session, we were captivated by its sweetness and delicate fruit character. We envisioned roasting it lightly, creating a gentle and sweet cup that people would naturally reach for when they wanted to relax and take a quiet moment for themselves.

When building the roast profile, we always begin with small sample roasts on a compact machine to evaluate how the beans respond to heat and to check their overall quality. Even at the sample roast stage, the fruit character was already remarkably expressive. We carefully adjusted the profile to preserve the delicate qualities cultivated by Mr. Glaucio and his team.

On the first batch roasted on our Loring roaster — the initial production roast — the coffee showed vibrant citrus-like aromatics and acidity. For the second batch, we developed the roast slightly further throughout the process, softening the acidity while enhancing flavor clarity and complexity. The texture also became smoother, leaving a pleasant and lingering finish after each sip.

By the way, this very first batch is occasionally offered as a WEB SHOP exclusive sample roast after passing our quality checks. Quantities are always extremely limited, but if you are interested, we hope you will keep an eye out for it.

When brewed as a pour-over, the coffee opens with bright impressions reminiscent of citrus fruits and plum, gradually revealing deeper sweetness as it cools, evoking almonds and baked apple. The lingering aftertaste carries both pleasant sweetness and refined fruitiness that can be savored slowly.
