<Chiroso>
Chiroso is a variety traditionally grown in Urrao, Antioquia. With its elongated shape, it closely resembles the Geisha variety in appearance. Recent studies have revealed that it belongs to the Ethiopian landrace family—an exciting discovery that has further increased its appeal. In 2020, a washed Chiroso from Los Tres Mosqueteros in Urrao took first place at the Cup of Excellence, drawing international attention to this unique cultivar.
Due to its resistance to cold, Chiroso thrives at high altitudes. It is also highly productive, making it a popular choice among farmers in the Urrao region.
This lot was produced by Nelson, a second-generation coffee farmer who learned the craft and the nuances of specialty coffee production from his mother, Ofir Bolivar. With a vision of becoming a producer recognized both in Colombia and abroad, Nelson currently grows only Chiroso on his farm. Together with haiz coffee, he also plans to begin cultivating Geisha—a development we’re truly excited about. After tasting this Chiroso, we’re sure you’ll share our anticipation for what’s to come.
We chose a light roast profile to let the natural quality of the coffee shine. With a slightly higher charge temperature, we introduced enough energy early on, and kept the total roast time just under nine minutes to preserve its bright acidity—like crisp apple or juicy peach. After first crack, we made sure not to extend the roast too long, maintaining the coffee’s delicate floral notes.
As we were weighing the roasted beans for cupping, a colleague suddenly asked from across the room, “What coffee is that?”—the sweet, fragrant aroma had instantly filled the space. That’s the kind of presence this coffee has, even before brewing.
In the cup, you'll find sweet and refreshing notes of lemon candy and orange. Urrao’s Chiroso never fails to bring a smile—it’s not flashy, but it has a quietly impressive elegance. As the cup cools, hints of green apple, pear, and gentle herbal nuances appear. Despite its light roast, the body is smooth and syrupy, gently enveloping the flavors and leading into a long, sweet finish.
