This coffee is crafted from cherries harvested in the Bruselas and Acevedo areas of Huila, Colombia. The processing was led by Nestor from El Diviso and Joan from Las Flores—producers known for their deep expertise in fermentation, developed through years of micro-lot production.
They have applied this fermentation know-how to elevate the quality of a traditionally blended washed Colombia. The process begins with exposing the cherries to oxygen, encouraging oxidation to enhance their natural sweetness. This is followed by a long anaerobic fermentation in water, drawing out vibrant, fruity aromas.
To lock in the desired flavor profile, the coffee is then stirred in hot water at around 50°C, and finally cooled quickly with water at approximately 20°C to halt microbial activity. The result is a unique expression that stands apart from the typical washed Colombian profile.
