<Tri-Up Project “RUBY”>

The Tri-Up Project began in 2023 with the mission of unlocking the full potential of the Geisha variety. Using only carefully selected Geisha cherries from farms located above 1,600 meters in Boquete, Panama, the project adopts a unique processing method rooted in the natural process. To highlight the vibrant acidity and floral aroma that are hallmarks of this region, cherries from multiple producers are blended—part of an ongoing effort to refine and elevate quality through experimentation.

2024 marks the project’s second year, and with it comes the introduction of Reposado—a technique in which cherries from various farms are combined and rested for 12 hours in a large tank to harmonize their condition. This step improves balance in the final cup, creating a more unified and integrated flavor profile.

This lot, named RUBY, undergoes Reposado, followed by 36 hours of barrel fermentation in a cool environment. It’s then transferred to raised beds: for the first three days, the cherries are dried in thick layers, then spread thin for a total drying period of 17 days. This careful approach results in a cup with layered complexity and depth.

The roast is kept light. With fermentation-processed coffees like this, we always pay close attention to the raw beans and how much heat they can handle. As sugars break down during fermentation, heat can more easily caramelize the outer layers while the inside remains underdeveloped. So, we build the roasting profile in advance, then adjust carefully while observing the beans to ensure even development. (As a roaster, we have to evolve along with the origin—there’s no such thing as perfect. It's a craft of constant learning.)

Once ground, the aroma is rich—sweet like chocolate, but with hints of tropical acidity peeking through. It’s the kind of scent that makes you think, “This coffee must be something special.” Upon tasting, you'll experience a slow bloom of stone fruits, pineapple, and dried fruit—a vibrant fruitiness layered with complexity. The sweetness supports the acidity well, making the cup feel luxurious but easy to keep sipping. A lingering chocolate-like aftertaste invites you to slow down and savor the experience.

This coffee is born from the hands of small-scale producers—farmers whose passion and care transcend the size of their land. Tri-Up works closely with these producers to continuously raise the bar in coffee quality.
