<Tri-Up Project “AMBER”>
Launched in 2023, the Tri-Up Project is dedicated to unlocking the full potential of the Geisha variety. Using only carefully selected Geisha cherries from farms located at altitudes above 1,600 meters in Boquete, Panama, the project explores innovative processing techniques based on natural fermentation. By blending Geishas from different producers in the region, Tri-Up aims to highlight the area's signature characteristics—vivid floral aromas and lively acidity—while continuously refining quality through trial and error.
2024 marks the second year of the project, and with it comes the introduction of a new technique: Reposado. In this method, cherries from different farms are combined in a large tank and rested for 12 hours to harmonize their condition. This step helps unify the flavor profile, resulting in a more balanced and cohesive cup.
This particular lot, “AMBER,” undergoes the Reposado process, followed by a gentle rinse in cool water. The cherries are then spread in a thin layer on raised beds for initial drying. After one week, they are gradually piled up and dried for an additional two weeks, which deepens the flavor complexity.
The roast is kept light, with careful control over heat application due to the coffee’s low moisture content (8.6%). Rather than overwhelming it with high heat, the roast is gently tapered to preserve the delicate aromatics. When ground, the fragrance is striking—floral and captivating, deserving of a moment just to inhale. Although it’s a natural process, the cup is as clean and refined as a washed coffee. You’ll find notes of stone fruits and mandarin orange wrapped in a creamy mouthfeel, making each sip irresistibly smooth. Interestingly, the coffee tends to show even more clarity and complexity after about 20 days from the roast date.
This coffee is born from cherries grown by small-scale farmers whose passion and precision know no bounds. Tri-Up works hand in hand with these producers, striving together to push the boundaries of quality.
