<Colombia Lusitania>
Lusitania is a fourth-generation farm with more than 100 years of coffee-growing history. Today, the farm is led by Alejandro, who oversees everything from overall strategy to processing and roasting, while his father, Javier, manages cultivation.
Rather than embodying a bright, stereotypically “Latin” personality, Alejandro is calm and pragmatic. He once remarked, “Colombians only think about tomorrow. We need to think more long term.” His words reflect the seriousness with which he views the future of Colombia’s coffee industry.
His work extends beyond simply improving quality at his own farm. He shares processing knowledge with neighboring producers, advises on reinvestment strategies for their farms, and even supports them in developing new sales channels. His aim is to elevate the quality and sustainability of the entire region.
In fact, Alejandro only began producing specialty coffee four years ago. After visiting farms in other countries and discovering new flavor possibilities, he immersed himself in studying processing and roasting techniques. Within Lusitania’s privileged terroir, he continues to search for “flavors yet to be discovered,” driven by a true researcher’s mindset. His efforts have borne fruit: in 2023, he won first place in the roasting category at one of Colombia’s largest coffee fairs. That same year, he also won the national Cup Tasters Championship and went on to compete at the World Cup Tasters Championship held in Chicago in 2024. Their rapid growth and grounded passion are truly inspiring.
We first purchased Lusitania last year, and once again, this year’s lot has arrived with vibrant, juicy fruit character. For this release, we have chosen a darker roast profile. Initially, we conducted short sample roasts to highlight brightness, but the acidity and bitterness felt slightly disjointed. By gently reducing heat from the mid to late stages of roasting and extending the development time, we achieved a more harmonious balance across the cup.
Immediately after roasting, the coffee presents a firm structure with a pronounced dark-roast bitterness. As it rests, however, the expression in the cup evolves. Notes reminiscent of grape and raisin gradually emerge, revealing not only bitterness but also layered sweetness and acidity. The full-bodied texture adds depth and dimension. As the temperature lowers, a subtle brightness appears, accompanied by a sweetness reminiscent of baked apple.
