This coffee is produced by collecting cherries from farms in the Bruselas and Acevedo districts of Huila, with Nestor from El Diviso farm and Joan from Las Flores farm at the forefront of the processing. They applied the fermentation expertise gained from creating microlots to enhance the typical washed blends of Castillo and Colombia varieties. Initially, the cherries are exposed to oxygen to elevate their sugar content, followed by an extended anaerobic fermentation in water to extract a more fruity aroma. Subsequently, they are stirred in hot water at around 50°C and then immersed in cold water at approximately 20°C to halt microbial fermentation, thereby preserving the intended flavor profile. This coffee offers a unique taste distinct from the conventional washed process and belongs to the Regional HCS (High Cup Score) series.

The green beans have a refreshingly sweet aroma reminiscent of green apples, suggesting a delicious coffee (the scent hints at a high-quality bean, making this price quite surprising...). We finished the roasting with a light roast. Due to the relatively high moisture content of around 11%, we increased the initial roasting temperature to ensure a thorough roast from the beginning. The fermentation process further enhances the smooth, velvety texture of the coffee.

The name "Calamboro" refers to starfruit in Spanish (an evergreen tree of the oxalis family cultivated in tropical regions, with a star-shaped cross-section). True to its name, this coffee offers a tropical and juicy impression. You can enjoy fruity notes reminiscent of pineapple and raspberry, combined with a robust honey-like sweetness. Additionally, it has a unique, milky impression similar to melted butter.

Although it is a mix of common varieties, the producers' experience and knowledge have crafted a cup with distinct character. You will surely be pleasantly surprised by the flavors brought to life by their expertise.
