<La Piragua>
This coffee comes from La Piragua Farm in Palestina, Huila, southern Colombia. Surrounded by mountains at elevations of 1,600–1,800 meters, this region has produced many outstanding coffees, and we have featured coffees from this area several times before.
The producer, Alexander Vargas, began learning coffee farming alongside his parents at the age of 15. At 20, he started focusing on specialty coffee production, and for more than two decades he has continued experimenting with new varieties and processing methods in pursuit of his own ideal cup. He grows varieties such as Pink Bourbon and Geisha, and the quality of his coffees has been recognized with multiple Cup of Excellence nominations.
His commitment to quality is evident throughout the farm. He even built his own cupping lab, where every lot is carefully evaluated to understand how it can be improved for future harvests and processing. In addition to coffee, he also grows dragon fruit, helping create a more sustainable future for the farm by diversifying its agriculture.
This lot is a Striped Red Bourbon. The variety gets its name from the orange stripes that appear on the cherries as they fully ripen. After harvest, the ripe cherries are fermented in sealed barrels for 60 hours before being slowly dried over 18 days. While the process itself is relatively simple, the careful control of fermentation and drying beautifully highlights the unique character of this variety.
Alexander often says that coffee is not simply his job—it is his passion. While honoring the family farm passed down to him, he continues to embrace new challenges without hesitation. We feel that spirit is reflected in every cup of this coffee.
For this release, we chose a dark roast. The moment we opened the bag of green coffee, we were greeted by an aroma reminiscent of fine spirits, and we immediately knew this coffee deserved a deep, expressive roast. Because the beans had relatively high moisture content, we applied strong heat from the early stage of roasting. Keeping the total roast time just over nine minutes allowed us to develop a rich dark roast while preserving the coffee’s vibrant fruit character.
After about ten days of resting, the beans develop a beautiful glossy appearance that suggests an intensely bitter coffee. Surprisingly, the cup reveals remarkable sweetness, creating a delightful contrast.
Freshly brewed, the coffee opens with aromas of dark chocolate, cocoa, and apple brandy. As the cup cools, sweetness reminiscent of dark cherries and Kyoho grapes gradually emerges, adding even more depth and complexity. While it offers the smooth, full-bodied texture expected from a dark roast, it also retains vivid fruit notes. That balance is what makes this coffee truly special.
It is also excellent as an iced coffee. Brewing with a slightly coarser grind highlights its bright fruit character, while a finer grind produces a richer, deeper cup that can be enjoyed slowly, much like a glass of fine spirits over ice.
