"Bona Zuria Sedaka"
The Bona Zuria Washing Station, owned by Tracon, is located at an elevation of 1900-2000m in Sidamo Bensa. Acquired in 2008 along with surrounding farmland, the station underwent renovations to pursue high-quality coffee production of exceptional grades. Under the leadership of Mr. Kebede, various processing techniques are tested and refined. The renovation has left the trees relatively young, boosting both productivity and quality. The station is praised for its distinct flavor profile, which vividly reflects the microclimate of Sidamo.
During harvest season, cherries are sourced not only from their own farmland but also from nearby smallholder farms. These cherries undergo re-sorting, floating removal, and screening through a pulping machine. Afterward, they proceed through fermentation and are washed in channels before being transported to African beds for drying. The water used in processing meets strict cleanliness standards, and steps are taken to manage fermentation times as well as moisture and water activity levels after drying. These practices help ensure a consistent production of high-quality coffee.
The washing station, surrounded by gentle hills, benefits from the cool mountain breeze, which aids in the two-week drying process for washed coffee. African beds equipped with agricultural shade for sun protection allow for gradual drying under carefully monitored sunlight and temperature conditions, aiming for the best possible quality.
Recently, many Ethiopian beans have shown moisture levels below 10%, so I was a bit surprised by this batch’s relatively high 11.4%. With the ample moisture, I increased the starting temperature and applied steady heat from the beginning, maintaining consistent energy without reducing it too much mid-roast. The roast released a sweet aroma, promising a delicious result.
This Ethiopian washed coffee balances refreshing acidity with sweetness, offering juicy flavors reminiscent of mandarin and apricot. There’s also an elegance similar to drinking tea with a touch of honey. It’s a versatile coffee, fitting for a morning cup with breakfast, an afternoon break, or a leisurely sip on a day off. This is a coffee that brings a bit of brightness to everyday life.
