Las Botijas

Nestled in the mountains of Honduras, Las Botijas takes its name from a local legend. “Botijas” were round earthenware jars with two openings, once used to bury money underground to protect it from humidity. Later unearthed, they were even used as musical instruments in the 19th century. The farm’s name refers to these “hidden treasures” said to rest beneath the land.

The farm was purchased in 2011 by Abel Girón. He began cultivating bold and large-beaned Pacamara, and in recent years has also taken on the challenge of growing Geisha. Originally a vegetable farmer, Abel learned coffee production through years of trial and error. Gradually, he expanded into processing his own coffee. His journey has not been easy, but through perseverance, dedication to quality, and the support of those around him, his coffees have gained international recognition. Today, Abel supports his family by balancing coffee farming with transportation work. His greatest goal is to send his eldest son to a better university so he can continue studying biology.

At Las Botijas, every step from harvest to drying is carefully managed. Only fully ripe cherries are selected, and continuous improvements are made in pursuit of consistent quality. Yet reaching this level of stability was not simple. Abel shares:

“My life has never been easy. My goal now is simply to escape poverty. Sometimes we lack resources, and sometimes we don’t even know what the right next step is.”

He also says:

“Direct trade is every producer’s dream, but it is not easy in reality. Auctions are a wonderful opportunity to be recognized by the international community. As producers, it is very important to keep searching for these opportunities.”

“For the future of my family, I want to produce better coffee.”

That quiet but determined wish is held within this cup.


<Roast Profile & Flavor>

We first encountered this Geisha during a cupping session, where its sparkling acidity immediately caught our attention. We chose a light roast to highlight its elegance and vibrancy.

During sample roasting, we carefully monitor aroma and note the exact timing of first crack. This Honduras lot began first crack slightly earlier than expected, which required a thoughtful adjustment. When roasting for production, we redesigned our plan—anticipating the earlier first crack and the tendency for temperature rise to slow afterward. We applied gentle heat in the early phase to avoid scorching, while maintaining steady energy in the latter stage to preserve clarity and sweetness. The result is a refined, delicate light roast.

Freshly brewed, it opens with classic Geisha florals and a lemon candy–like sweet acidity. As it cools, notes of stone fruit sweetness emerge, accompanied by a green tea–like finish. From the bright, sparkling acidity at higher temperatures to the more pronounced florals as it cools—and even in its smooth texture when fully cooled—each expression of this coffee is something we truly cherish.
