"El Puente"
El Puente is a farm located in Chinacla, La Paz Department, Honduras. As it is one of Honduras' top-tier farms, many might have heard of it (Philocoffea handles it every year!). Marisabel, born into a family of coffee farmers spanning four generations in Honduras, is from the Marisabel family. The history of coffee cultivation in the Marisabel family dates back to 1907 when her great-grandfather began growing coffee in Honduras. She grew up watching her father's involvement in coffee production from a young age. Today, she is involved in coffee production at the El Puente farm with her husband, who hails from Guatemala. In 2016, their coffee achieved an outstanding first place in the Cup of Excellence (COE), breaking the record for the highest price ever in COE auctions at the time.

 

This washed Geisha coffee underwent a cherry selection process for ripeness before being pulped to remove the flesh. Subsequently, it underwent anaerobic fermentation in wooden barrels. During fermentation, the temperature of the barrels rises, so they control the fermentation process by placing them in a cool, dark place and spraying water to keep them cool. Maintaining low temperatures allows lactic acid bacteria to thrive, bringing out a rich body and sweetness through lactic fermentation. This process enhances the smooth mouthfeel and exquisite character inherent in the Geisha variety even more.

 

When you pour hot water, a delicately fragrant and elegant aroma fills the air. The floral and herbal notes, along with the sparkling sweetness reminiscent of lemon candy, transform ordinary moments into luxurious indulgence. Despite being of the Geisha variety, this coffee offers a pleasantly full sweetness and a smooth texture that you can truly savor. The lingering aftertaste in the mouth is exceptionally clean, truly deserving applause for the renowned El Puente farm. Aging is recommended after 20 days from the roasting date. Indulging in this coffee's captivatingly pristine liquid is an experience beyond compare.
