Pacamara is a cross between the Pacas and Maragogipe varietals. It is characterized by its huge grains, making it difficult to heat evenly during the roasting process or remove the moisture.
For this reason, it is one of the beans we are nervous about, and we check the profile many times before starting to roast.
We took our time to make a medium roast to bring out the thick sweetness of the mandarin orange. It has a smooth texture and a sweet aftertaste that is gentle and soothing.
