This coffee was harvested in a small village called Gute within the same area as Ethiopia Sidama Bona W, at an altitude of 2320-2350 meters, which is quite high. The elevated altitude means a longer growing season and a slower ripening process for coffee cherries. Consequently, the cherries store more sugars through photosynthesis compared to shorter growing seasons. Additionally, the lower nighttime temperatures in this region lead to less sugar consumption, resulting in cherries with higher sugar content.
The harvested cherries are gathered at Bona M.T. Station. This station, established in 2023, exclusively collects ripe coffee cherries, paying higher prices to the producers than other washing stations. Furthermore, a bonus is provided for the collection of fully ripe, purple cherries, which incentivizes producers to improve the quality of their harvest.
The hand-picked cherries are carefully arranged on drying beds and left to dry for four weeks. Afterward, they are transferred to jute bags and rested in a warehouse for one month before being transported to the capital, Addis Ababa.
"74110"
The 74110 variety is a cultivar introduced by the Jimma Agricultural Research Center (JARC) in 1974. It's known for its resistance to Coffee Berry Disease (a fungal infection caused by Colletotrichum kahawae that results in the withering of coffee berries, leading to an anticipated 80% reduction in yield if infected). This variety was officially approved and distributed in 1979. The beans are quite small in size and have a round, smooth shape. According to research conducted by the Taiwanese coffee trading company Tri-Up, it is said to have a strong stone fruit flavor, reminiscent of peaches and apricots!
