Only perfectly ripe cherries are selected before undergoing a \u003c\/span\u003e\u003cspan\u003e48-hour oxidation stage\u003c\/span\u003e\u003cspan\u003e, during which naturally occurring yeasts and microorganisms on the fruit begin developing the coffee’s complex aromatic profile.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe cherries are then transferred into sealed fermentation tanks for \u003c\/span\u003e\u003cspan\u003e24 hours of anaerobic fermentation\u003c\/span\u003e\u003cspan\u003e.
