Its green beans are long and slender, resembling those of Geisha. Recent research has revealed that Chiroso is actually an Ethiopian heirloom-derived variety. In the 2020 Cup of Excellence Colombia, a washed Chiroso produced by Los Tres Mosqueteros Farm in Urrao won first place, bringing this remarkable variety into the global spotlight. Chiroso is well suited to high-altitude cultivation thanks to its tolerance to cooler temperatures, and its relatively high productivity has made it a favorite among producers in the Urrao region.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe producer, \u003c\/span\u003e\u003cspan\u003eNelson\u003c\/span\u003e\u003cspan\u003e, is a second-generation coffee farmer. He learned about coffee production and specialty coffee processing from his mother, \u003c\/span\u003e\u003cspan\u003eOfir Bolivar\u003c\/span\u003e\u003cspan\u003e, and is working toward becoming a producer recognized both in Colombia and internationally. At present, Nelson’s farm is planted exclusively with Chiroso. In the future, together with Haiz Coffee, he plans to begin cultivating Geisha as well. We believe this Chiroso offers an exciting glimpse into the quality we can expect from his future Geisha lots, and we look forward to seeing his journey continue.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eFor this release, we chose to roast the coffee to a vibrant dark profile. Because the green coffee had an exceptionally high moisture content of 13%, we used a higher charging temperature and applied ample energy from the beginning of the roast. The total roast time was approximately \u003c\/span\u003e\u003cspan\u003e9 minutes and 40 seconds\u003c\/span\u003e\u003cspan\u003e. By keeping the roast relatively short, we aimed to express the rich, toasty character of a dark roast while preserving the coffee’s inherent fruitiness and sweetness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eImmediately after roasting, the aroma is dominated by bittersweet notes created during the roasting process. As the coffee rests, however, these gradually evolve into a sweeter and more layered fragrance. Personally, I recommend opening the bag about \u003c\/span\u003e\u003cspan\u003e14 days after the roast date\u003c\/span\u003e\u003cspan\u003e. At that point, you’ll experience the calm, comforting character of a dark roast alongside juicy fruit notes and a lingering sweetness. The coffee continues to evolve after opening, so we encourage you to enjoy the changes in flavor over time.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe first sip brings a pleasantly bittersweet impression characteristic of a dark roast. Beneath that, however, lies a gentle chocolate-like sweetness, creating a beautifully balanced cup where the bitterness never overwhelms. As the coffee cools, sweet stone fruit notes reminiscent of \u003c\/span\u003e\u003cspan\u003eyellow peach\u003c\/span\u003e\u003cspan\u003e and \u003c\/span\u003e\u003cspan\u003eplum\u003c\/span\u003e\u003cspan\u003e begin to emerge, followed by hints of \u003c\/span\u003e\u003cspan\u003egrape\u003c\/span\u003e\u003cspan\u003e that add further complexity. A rich, silky mouthfeel is another defining characteristic of this coffee.
