"Bona M.T. Station"
This washing station is a relatively new facility, having commenced operations in 2023. In most cases, harvested cherries are purchased from producers regardless of their quality since they are either brought to nearby washing stations or collected by trucks. However, Bona M.T. Station is distinct in that it exclusively collects ripe coffee cherries, paying a higher price to producers compared to other washing stations. Additionally, a bonus is provided for purple, fully ripened cherries, further incentivizing producers to enhance the quality of their harvest.
Grown at elevations exceeding 2,000 meters, coffee beans at this altitude and with optimal ripeness possess a robust sweetness. The processing is washed process. During the three-week drying period, the parchment is regularly stirred to ensure a transparent flavor profile is maintained without compromise.
"74110"
The 74110 variety is a cultivar introduced by the Jimma Agricultural Research Center (JARC) in 1974. It's known for its resistance to Coffee Berry Disease (a fungal infection caused by Colletotrichum kahawae that results in the withering of coffee berries, leading to an anticipated 80% reduction in yield if infected). This variety was officially approved and distributed in 1979. The beans are quite small in size and have a round, smooth shape. According to research conducted by the Taiwanese coffee trading company Tri-Up, it is said to have a strong stone fruit flavor, reminiscent of peaches and apricots!
At the green bean stage, it had a promisingly sweet aroma, so I kept it simple and roasted it for about 9 minutes, resulting in a light roast.
When it's warm, you'll taste a refreshing, transparent fruitiness akin to muscat grapes, white peaches, and white grapefruit. As it cools a bit, red fruit flavors like mandarin orange and blackcurrant start to emerge (it gives a slightly Kenyan-like impression, and personally, I enjoy this transition from brightness to juiciness). Additionally, there's robust sweetness akin to apricot jam that provides excellent balance. When it cools completely, you'll notice hints of pear, lemongrass, and honey lingering in the finish.
